Italian Wine Varietals In Temecula Wine Country, Part Iii
Todays article is about a delightful rich in flavor grape varietal Malvasia Bianca (pronounced Mal-va-ZEE-ah Bee-AHN-Kah), again originating in Italy. Malvasia is natively identical to the more well known Muscat Canelli or Muscat Blanc grape. Characteristics of this wine can change from delocate to robust, dry to sweet, high to low alcohol. It is sometimes made as a sparkling wine.
In this article we will talk about one of these newly appearing Italian varietals in Temecula Valley Wine Country. Malvasia Bianca is a member of an age-old, highly esteemed Greek family of grapes made into wine in a myriad of styles throughout Italy. Malvasia Bianca is widely harvested, light-colored grape varieties in Italy and the world. On the islands of Sardinia and Sicily, it makes rare, rich and beautifully fragrant passito wines.
Choose sweet or dry, Malvasia Bianca produces wonderful aromas and tastes of honey and ripe Bosc pears with hints of allspice. Full-bodied, lavish fruity tastes and a rich feel lead to a finish that is decided by the degree of lingering sugar and the cellar treatment. The lightest versions give a clean, crisp ending, while those matured in small barrels may show light tannins and a hint of vanilla. Sweetened, more rich versions remain on the palate. Team together Malvasia Bianca with pork, rich cheeses or enjoy by itself. Other great food pairings with this wine are Seafood antipasta dishes (shrimp, scallops, and calamari dressed with oil and lemon) and grilled vegetables for the lighter wines. Grilled fish accompanying light provencal-style sauces teams up well with the fuller wines. The sweeter wines require only a simple almond biscotti (no chocolate please) to dip in the wine, original Sicilian cannoli or an apricot or plum tart with a marzipan pastry crust.
Malvasia is harvested throughout Italy and around the world. It growns hardily where it gets good exposure to the sun and where the soil drains well. Unlike the dessert wine variations, Malvasia wines do not mature well and should be drank soon.
In Temecula Valley, Malvasia Bianca is accessible as a 2% Residual Sugar (quantity of sweetness remaining in the wine after fermentation is halted) at Cougar Vineyard & Winery which is located at 39870 De Portola Road. This winery is situated on the De Portola Wine Trail of Temecula Wine Country. It also has three year old vines harvested on the winery property in Temecula Wine Country. Weins Family Cellars has a similar styled Malvasia Bianca. Weins is situated at 35055 Via Del Ponte off of Rancho California Road in Temecula Wine Country.
Cougar Vineyard & Winery is harvested in entirely Italian varietals within 2,000 of the 8,500 vines being Malvasia Bianca. Cougar will be discussing all of these other varietals being harvested by Cougar in previous articles regarding the Italian grape varietals harvested in Temecula Wine Country of Southern California.

Which one of these knives would you (or not) recommend?
Cold Steel Recon Scout (7 1/2" carbon steel), Trail Master (9 1/2" carbon steel), or San Mai Recon Scout (7 1/2" San Mai III steel)?
if you can afford the san mai recon scout, it'd be your best choice. i have the carbon v trail master, and i love it. the recon scout's just a slightly smaller version. try to get the older ones, last year's models or earlier. they recently changed steels and the quality has suffered.
the san mai has the benefit of carbon steel for the edge, and the rust resistance of stainless for the sides. laminated steels are more expensive, though.
